Fresh Norwegian Salmon on a bed of leeks and cream
Ingredients
4 Norwegian salmon steaks, (wild salmon is always best) 1 Good sized leek 2 Carrots 2 sticks of celery 1 small onion 1 small pack of sugar peas. ( the peas that are complete in the pod) 1/4 liter of cream.
Brit's son, Oyvind Skjerstad Ramsoy (who is a double gold medal winner for food preparation, sauces and marinade's for Norway) with a 9kg Salmon, caught on the river Logen in Vestfold/Telemark. A magnificent fish and it made some incredible dishes. Fresh wild salmon just tastes so good.
Preparation Cut the leek, carrots, celery, onion and sugar peas into manageable pieces, mix them all together and place in a lightly buttered oven dish, add a little lemon pepper. Place the Norwegian salmon steaks on top of this bed of vegetables and lightly sprinkle with salt and lemon pepper. Pour the cream over the salmon and vegetable bed. There is no need to cover the dish with aluminium foil. Place in a pre-warmed oven at 180 degrees C for about 20 Min's (until the fish is cooked).
This dish, is a lovely, tasty and juicy dish, it can be served with potato's and vegetables but i prefer it with wild rice and a small side salad. Delicious in the extreme.
Enjoy this lovely salmon dish with a nice glass of white wine, my personal favourite is Californian or Australian, any, they are all good from these regions. |
